serves about 8 - 10
salad:
2 romaine hearts lettuce cut into bite size
2 medium cucumber or 1 hot house cucumber chopped coarse about 1/4 inch thick
3 big tomato chopped coarse about 1/4 inch thick
4 green onion head removed and chopped fine
1 cup of chopped fresh parsley
1 small red bell pepper
1 small green bell pepper
1/4 cup fresh mint leaves chopped fine
2 cup pita chips or baked pita bread. for gluten free, use 1/2 cup of roasted chickpeas or gluten free toasted bread.
Dressing
2 tablespoons Zaatar
1/2 tablespoon dried mint (1 and 1/2 teaspoon )
1/2 teaspoon paprika or 1/4 teaspoon cayenne pepper
1/4 teaspoon cumin
3 tablespoons extra virgin olive oil
2 teaspoon red wine vinegar or cider vinegar
4 tablespoon lemon juice or adjust to your taste
salt to taste
3 cloves of garlic minced.
1- put the first eight salad ingredients in a bowl
2- mix all the dressing ingredients well
3- add the dressing to the salad mix
4- toss the salad gently.
5- when ready to serve, add the pita chips and mix gently.
if you put the pita chips or the baked bread it will get mushy after a while, therefore you need to keep the bread to the last minute before serving.
for gluten free. add roasted chickpeas instead of pita bread or use gluten free toasted bread.
I roasted the chickpeas by coating them with oil then Zaatar for just 10 minutes
